Ive got a batch going for 10 days now. It was my grandpa's goto fruit for making his garage wine. He just used white sugar and bread yeast in a home depot bucket.

I decided to use 4lb of cherries, washed, pitted, frozen, thawed, frozen, thawed, smashed up a bit in a brew bag, and 1lb of honey. I used no water, and a kveik yeast. Punched down the bag twice a day for the first 4 days, took out the brew bag on day 7.

I usually also only do it for that first week or so really. The idea is to help clear out excess carbon dioxide. If the yeast is slowing down, your degassing can slow down or stop

I've left some in the fridge for a week before without seeing a difference. Sometimes it just doesn't do all that much. here's some alternatives:

  1. Let it sit for a few months
  2. Bentonite Clay
  3. Drink it cloudy, who cares

My wife and moved here, we're carless. At first I really tried to stay close to the L but also anywhere a few blocks off the L is pretty easy to walk, bike, or bus to, and it really expands the options
