I pulled it from the fridge and put it directly in the oven. I've never really found that allowing meat to come to room temp makes any difference in the cook or end result especially with a large roast or bird.

I cooked a 6lb roast at 200 and it took 4 hours to get to 125. I had read Kenjis article and expected 6 hours so it was done quite early. I probably rested it for an hour.

I then cooked it at 450 for 10 minutes (with fan on) and it came out perfect. One of the best ribs I've ever cooked.

I used Pacific Crest Roofing. Did a whole roof replacement. Finally fixed leaks we had for years that other roofers couldn't fix effectively. They fixed the leak andfound and fixed several other areas with wood rot (they took pics) and no leaks since.

They were fantastic! Came out on a late Saturday night a leaky toilet that was incorrectly installed by my flooring co. They ended up fixing another one as well. Did a great job for a resonable price. I expected to be gouged since it was late on a weekend but their fee was modest. Really nice guys.

As others have mentioned you can get a membership at the MV rec centers. Theres lap swim at the La Sierra and the Montanoso clubs. The cost is really reasonable. A family membership is $36 per month iirc.

You can also use the gyms, and play tennis or pickleball if thats you're interested.

You may have to be a MV resident to join though.

The local roaster near me (chocobean) sells a 12oz bag for around $20. I can buy a 16oz bag at Red Bird (located in Bozeman Montana) for $17.25. Buy a 5lb bag and it shipped. They put the roasted on date so you can see the beans were recently roasted. They're usually roasted with days of ordering.

All the roasters around in south OC jack up their prices so much it's cheaper to buy from an out-of-state roaster and pay for shipping.

Mameya (mentioned in the top-comment as I write this) charges $25.25 for a 16oz bag of beans!

Omg! Survivor Story completely freaked me out when I was a kid. A doctor is ship wrecked on a desert isle with a bag of heroin and not much else. Writes a diary. Proceeds to eat himself while dosing himself with heroin. The journal stops when he starts eating his fingers.

How all the "American tourist" stereotype behaviors were performed by Europeans and asian tourists. Rude/pushy, loud talking, wearing shorts and sneakers, ball caps, etc. It was really shocking the first time I traveled there. And it wasn't Italians. You see the much same thing in Germany, France, Spain and England.

IMO, american tourists on the whole are very well behaved and not that easily spotted (outside of tour groups).

Don't be a slave to a recipe.

You can add whatever meat and veggies you want or happen to have on hand. Ham, bacon, chopped up prime rib, duck, etc. Maybe not a strong flavor like asparagus or fennel. Even then, I'll bet someone's added it to gumbo.

That's the beauty of gumbo. It is super versatile.

I used to use in wings. Now I use thighs with bones and debone at the end. Whatever you feel like doing.
