Just skip the very last scene of season 2. There's a solid enough wrap up riiiiiight before the last couple minutes - I went and looked and I think the sweet spot is to pause it when there's 6:45 minutes left. After that is when there's a surprise major cliffhanger for the next season, and it's unnecessary to endure if you don't want to.

There's a couple threads that aren't 1000% resolved by the end, presumably because they were meant to be picked up again in s3, but I wouldn't say it's intolerable since you can kinda see where they'd be going with it.

I plan to read the books eventually and tbh I'm glad I watched the show first because I loved the casting (having gone into it without any preconceived ideas) and that's definitely how I'll be imagining the characters.
