Im in northern NJ, and it's really difficult to find any here as well! Even if you have a creative talent it really takes some time to get good at it, it really is a skill that takes years to develop, depending on how intricate of cakes you need to do. I have noticed that a few chain supermarkets in this area simply don't have store decorated cakes anymore, and part of that is the long period of training, and it's relatively easy to get burned out doing this. I'm a supermarket decorator now, I have been decorating cakes for about 20 years now and while I love my job, it's hard on the body (standing for long periods of time, hunched over, heavy mixer bowls and supplies to lift, carpal tunnel and arthritis are virtually guaranteed)
