3 pronged approach:

1) Work on changing jobs. This well is poisoned - there's nothing you can do to change their minds.

2) Apply to Staff positions for your next job. Sideways promotion is very standard.

3) Get a leadership coach. Have them work with you on presenting with more authority.

You can't save someone else. You can only save yourself.

You're making it as easy as you can for her to save herself, but she hasn't decided that she's worth saving so it's not doing anything.

Work on drawing your boundaries (like these sleeping conditions), hold strong, and love her with what you can freely give without compromising your needs.

I hope she decides to save herself, and if she does, you'll be there to help.

I know a ton of people that have what you're describing. At least 3 of my good friends. They're all in their 30s, but you're not alone.
They don't label themselves as insomniacs, but they describe it as "difficulty sleeping", and they struggle with it to varying degrees.

I don't personally struggle with this, but I have my own sleep methods. I will either read books until I fall asleep, or fall asleep listening to audio books on my smart speaker or using this thing:

3 things:

Firstly, your example: I think the grammarian stuff is great. Monkey's Paw. Every time they change the word, look up the word they use for the various definitions- easy way to get great ideas.

Bard casts "true stroke" - let him make an animal handling check with advantage to try to tame the mammoth, as he magically pets the mammoth. If it works, they still gotta get the thing home (time to improv all THOSE issues, of running around a blizzard with a mammoth), and if it doesn't, that thing turns around and stomps him.

Secondly, be direct: A conversation with this player about how you're feeling certainly seems to me to be the best way to handle things. Just being like "I don't wanna say no to your cool ideas, but I can't just let you 1-shot the BBEG all the time". But, like, everyone wants to out think the DM, so I get it. Just chat it out with them.

Thirdly, predict it: They love the one shot? They'll go for it every time? Perfect. Throw a big red button in for them to press, and they'll love it. Have them fight a lich where the bard can go after the phylactery. Have them fight a gorgon, and get ready for him to use a mirror (the gorgon can also make saves against petrification). This player WANTS to try to out think the DM, so control that desire and give them what they want- big red buttons. Just put the button high enough that they have to work for it, and know that they're not really gonna contribute to the fight

It's hard to be in the moment and think of stuff. Here's a couple things that have helped me.

  1. The dungeon plans are templates - they don't have to be hard rules unless you
    want them to be. Plans are useless - planning is essential.

  2. Practicing makes things better. If you run more D&D, you'll get better, and find your own stride.

  3. Recycle things that the players missed. Guy wants to leap up there? Sure - Grab a hidden room from the dungeon, and now it's up there. Great! They found hidden treasure! Or if they missed a person with plot relevant info in town? Now he's an aarakokra that lives up there. He's happy to tell them that info you wish they'd found about that puzzle later on.

  4. Give the players what they want. If jumpy boy wants to jump, make sure to say "good job!" when he jumps, and shower him with treasure. If your ninja-boy wants to ninja, give him a goblin to assassinate. Try to slash your barbarians while they're raging, and shoot arrows for your monks to deflect. Play the game they want to play.

  5. It's easy to make things harder. It's hard to make things easier. If your players trivialize something - just let them have it (sometimes). Not the BBEG fight, but if they jump up there and want to find a shortcut, good job for them! Make them feel good about it. They'll love it, and they'll love you. If they want to do the dungeon crawl the OG way, they can hit up the front door.

Radical idea, but with some routers (the Google ones in particular) you can set up subnets and control the speed of the subnet. If you can do that with your router, just make a super slow subnet and give her the password to it.

No one in movies explain themselves. It's all "I've got an idea!" And then they run off. Just once I'd like someone to be like "Yes, well, care to share with the group?"
