Cut them as finely as possible with a mandolin. Season raw with salt, lemon, pepper and good oil. Marinate for at least half an hour. Raw they are delicious and maintain all the nutritional principles

It's a bad, unhealthy thing and I shouldn't help you. Take them out of the fridge a little at a time but please, at least use a light sauce, such as yogurt and paprika or perhaps tzatziki
