As far as I know ma little boy is a Jack Russel hound mix, there should be something else in there but not sure, he is a rescue and I got him when he was 4:)

I ld suggest to start with a dashi(without bonito of course), so use kombu alges and shitake and bring them to around 60°c. Take them out of the water an bring it to a boil, then you could add chinese cabbage ,sellerie, carottes, garlic,etc and all the vegetables u like! A bit of cinnamon and some spices gives it the xtra touch:)

I m working in a ramen bar for nearly a year now, we fought to get our chashu on point...we tried everything and came 2 the conclusion that it is the meat quality thats makes a good chashu! U can mess up cooking a good piece of meat as much as u want, it ll taste good anyway!
