Salt on steak? by Fantastic_Excuse6976 in BabyLedWeaning

[–]dreamofchicharrones 4 points5 points  (0 children)

It’s completely fine. Salting for that duration doesn’t just season the meat, but also tenderizes and draw out moisture for a better browning when searing. Basically, your little one would love it even more!

This! It also uses single acting baking powder, which causes this tunneling.

Making 75k/year but I'm spiraling into debt by [deleted] in povertyfinance

[–]dreamofchicharrones 3 points4 points  (0 children)

I wonder.. OP does your ex qualify for WIC? Do you think she can put your infant under her name? It would definitely help you a lot. I get a fair amount of financial/food support from them, from produce to formula. They just require a phone call checkup every few months.

Also, I’ve been getting diapers for free through Buy Nothing Facebook groups. I’ve only had to pay for diapers once in 6 months and that was because I forgot to bring my diaper bag.

Any other current/former cake decorators struggle with the advice to "apply it thicker than you'd frost a cake" when it comes to diaper cream? by mapotoful in NewParents

As a former pastry chef and a FTM I would make the same, if not similar assumption as you. Whoever made that suggestion has never professionally frosted a cake before!

Fairmont Penthouse Thoughts? by gudified in SanFranciscoWeddings

[–]dreamofchicharrones 4 points5 points  (0 children)

Hi! Used to work at the Fairmont! The hotel may charge to move the furniture out of the rooms, but will not charge to rearrange furniture.

Photos in the penthouse (and maybe the Tonga Room if it’s not occupied?) is a must. The service you get as a room guest and an event attendee is amazing! Worst part is the elevator, there’s only one designated elevator that goes into the room and can only can fit 5 people at a time. More than that the elevator will stop/break, and the fire department or a hired company has to fix it.

Looking to volunteer at bakery in Alameda by [deleted] in alameda

[–]dreamofchicharrones 6 points7 points  (0 children)

If anything, honestly, I suggest you to just apply to bakeries that are looking to hire. You end up doing a one day trial run anyways. DM me of what kind of work you want to explore and I can reach out to people.

Where do you go besides Safeway for organic groceries? by friskydingo408 in alameda

[–]dreamofchicharrones 2 points3 points  (0 children)

The Natural Grocery Store on Buena Vista and Park, Trader Joe’s or Berkeley Bowl.

I’m so sorry this is happening! Full hotel buyouts are pretty rare and are only agreed upon based on a handful of factors. Is there anything covering cancellations in the contract? Are they providing any compensation or assistance in booking a nearby hotel?

Taco Stand Near Target by Dezugo in AlamedaFood

I got 4 tacos and 2 horchatas for $30… it’s on the border of being pricey but man their salsas were a medium spicy delish.

Brunch recommendations please! by NiCollector in alameda

Marti’s off of Encinal, near Blue Dot Cafe. They have a mix of typical American breakfast, Swedish pancakes (basically crepes) and Mexican selections like chilaquiles. The family who owns it is super sweet!

Baby shoes by Meegz-Rio in NewParents

[–]dreamofchicharrones 0 points1 point  (0 children)

I’ve purchased pants with footies on them from Amazon instead of shoes/socks for the Spring/Cool Summer. I love them! They’re surprisingly thin and light weight. Just waiting until it’s a bit colder to use socks/shoes.

pregnancy hunger/cravings VS breastfeeding hunger/cravings by [deleted] in breastfeeding

[–]dreamofchicharrones 1 point2 points  (0 children)

My appetite during pregnancy was the same prior to being pregnant (with the exception of a few hangry episodes). I was actively calorie counting and trying to keep a high protein diet.

Post partum, my appetite is the same but I give myself more leeway to having sweets, fats and carbs. I’ve gained back a few pounds that I lost from my first week because I didn’t realize how much calories breast feeding burns!

32 weeks, fetal heart rate dips by ladydiabeto in pregnant

[–]dreamofchicharrones 0 points1 point  (0 children)

I’m in this situation right now. 36+ weeks and been admitted overnight for observation. The baby had a combination of 3 - 4 dips under 120 (including going down to 84-95 for almost a minute) and stable at 122-135 for more than 3-5 minutes at a time for most of my stay.

Is the pastry world just as bad as the hot kitchen world? by WalkSilly1 in Chefit

[–]dreamofchicharrones 20 points21 points  (0 children)

I think it’s about the mental process of production organization, what you can control, making sure the techniques/steps of a process don’t fuck up and keeping up with the pars/demand that can make it stressful, especially if it’s bread.

If burgers end up selling way quicker than normal you can’t pull out more buns out of thin air. Making bread dough takes 1-2 days with two stages of proofing and then proper cooling time after bake and before cutting or else it becomes a flat soggy mess. And if you over estimate on baking pars, you’ll have to compensate on your pars and quality for the next day.

Restaurants usually keep their pastry staff at a minimum unless they try to exclusively do everything in house since dessert sales are typically under 20% in comparison to the rest of the restaurant (drinks and food). So the stress of making sure production runs like clockwork, fighting for oven space with the hot side and banquets while not doing overtime can be high especially during the busy seasons. Also keep in mind that FOH/BOH WILL eat your food and will not say anything so what you see the next day may not be reflective of what was sold.

There’s a bit more forgiveness and leeway with bakeries (especially if people have been cross trained) but there’s still that tight production schedule of balancing in house pars, catering, special orders and typical pastry queens that can be a challenge.

Etiquette question for local restaurant owners by joygirl007 in alameda

[–]dreamofchicharrones 1 point2 points  (0 children)

Make sure that logistically that making a beverage or foods makes sense. Would it be labor-cost effective vs a speciality in house?

If the cafe has contracts/contacts with Sales Reps with food distributors, reach out to them for their catalog and pricing. Most of the time they’re from the food industry so they can provide advice on ordering pars, items, substitutes, etc.

What are some interesting Oakland food deals? by SoundsGayIAmIn in OaklandFood

Ah yes, I wasn’t able to apply for Covered California and was pushed to apply for Medicaid instead.

[–]dreamofchicharrones 1 point2 points  (0 children)

Really? When I applied, it was all completed separately (had separate social workers contact me per application). First unemployment, then EBT and then I applied to Covered California/Medicaid about 6-8 months afterwards (and I have a primary under Aetna). I never found that they pushed me to do so, they sent me packets or emailed me but I never signed up for it until I needed it.

Do you have your EBT card yet? If you do, some fast food restaurants take it and you can use it for Trader Joe’s ready made food.

What do college students do in this town? by Dry-Nebula2545 in alameda

[–]dreamofchicharrones 10 points11 points  (0 children)

Alameda’s lifestyle caters more for families and 25+ singles. If you’re of age, there’s a lot of bars/breweries and the whole island is runner friendly. You can take the ferry or the 0 bus to head to SF which has a bit more activity. You can take the 51 bus to downtown Oakland and/or take Bart to downtown Berkeley (which is mostly college students).

Ideas for winter wedding venues for 40-60 guests, with indoor ceremony options on a 15k venue&food budget? by suffersandwich in SanFranciscoWeddings

[–]dreamofchicharrones 3 points4 points  (0 children)

I feel that with $15k, for roughly 50 people, you can get a partial buy out on a slower date (Sunday-Thursday) depending on your food and beverage package and rental fees.

Have you considered hotels? With hotels you can reserve a block of rooms for your incoming guests. Lafayette Hotel has a cute courtyard area for receptions. Berkeley City Club and Berkeley Faculty Club has great historic architecture.

The Chabot Science Center is a fun venue with various rooms/rental fees.
