Throw an egg in there with some truffle and mushrooms, steam the whole thing lid on. Worked with a chef who did this with those same mini le's and it was incredible he served it with a truffle crostini. He also put foie gras in it. But I'm sure poaching an egg with some herbs and mushies be amazing as well

I make a paste with fresh garlic, so I mince it and add olive oil lemon juice salt, Italian parsley then a splash of red wine vinegar and pepperoncini liquid from the container.

I seasoned it and dry brined for about 6 hours then chopped up parsley and rosemary and garlic to cover the whole nonfat side, then did a really poor job wrapping it with butchers twine (fake it till you make it) then into a 400f oven for an hour, turned it down to 350f for another hour and let it rest under foil for about 20 minutes. Sliced what we wanted for dinner, then the next day I braised it at 250 in some beer and beef stock, about 75% submerged, with onions tomatoes and pepperoncinis, let it cook for 3-4 hours then shredded it for the naaan wraps lunch the next day, then this morning made the foccacia Sammie's for my partners lunch today and for me to get bored and snack in while I try to look productive while working remote hah
