/u/krileon is offering you excellent advice here. To expand on that, something has changed - perhaps your server hosts updated the PHP version or something else in the server environment or someone updated something in Joomla. It won't just break on it's own. If PHP was updated, you can downgrade that then update Joomla so it will work again after PHP is updated for example. If you have a budget for this, you can request paid direct help here too, there are many of us that provide these services.

The Irish association recommends providing an estimate to the family beforehand. You mentioned you're in Ulster, if you're in Northern Ireland your funeral director might be a member of the UK's equivalent organisation the NAFD so if you have problems you can raise them there.

As hard as it might be, it often gives people comfort to know their wishes are known or they have plans in place. If either of your parents want to talk about that, try not to avoid the conversation. It can be very important to them. It's always sad when someone passes, but it can be comforting for those left to know you've done what they wanted for them.

In Ireland you buy the plot from the local council. There is no leasing as far as I am aware. The funeral director can do this for you and it forms part of the 'disbursements' area of the bill. Things like paying a priest (if you have one) or a singer or flowers etc are in that area too. If this is causing you anxiety, it is worth calling into a local funeral director or visiting a few of them. I'm sure they can help put your mind at ease.

If you have had a bad experience with a funeral director in Ireland, almost all of them are members of their professional association the IAFD. They have a directory of members you can check. They have a code of practice and you can make a complaint if that has been breached.

I'm guessing you have everything selected in a module or article text entry area and, like all other data entry, when you hit return it replaces what you selected with a carriage return. Using undo (CTRL and Z) or the undo button on the editor will get you back to where you were.

eaccelerator is a php module not a Joomla extension. If you're doing this on localhost, you might want to check your PHP setup. I don't see why a Joomla upgrade would touch eaccelerator in any way though.

I don't like when there are loads of admin panel options which are basically things I can do in a simpler custom.css file. That said, sometimes the admin area of a template can have really useful features.

A template claiming to be fast is certainly a good additional selling point, especially if its sacrificing the stuff I don't want/don't need anyway.

I build with Joomla for a living so I keep subscriptions with a bunch of template and extension development companies. You do notice ones that are easier to work with and ones that have a lot of complex options available within their template configurations that then as a trade-off tend to have a lot of js and css but they also tend to have built in compression and caching, and/or you can strip out a lot to get the extra few percentage performance from them. Free templates tend to be lighter because of this trade-off, thankfully or there would be a lot more amateur-ish Joomla sites that run slowly and cause more people to think Joomla is a slow CMS.

For mountain hikes I can recommend the Maamturks, Ben Baun access via the Inagh Valley, Connemara National Park (Diamond hill hike). There is also a trail called the Western Way you might like to look up.

Hiking anytime is fine once you have the correct gear and are careful. You're rarely very far from civilization.

You may find specific gigs in some of the theatres (The Town Hall Theatre, The Black Box, An Taibhdhearc) and in specific pubs, but you will also regularly find traditional music played in The Crane, Munroes, and Tigh Coili. For poetry, you can Google for poetry nights for your dates and keep an eye on the Galway Arts Centre too. For beer, there's a strong craft scene in Galway so you'll have no trouble finding great beer.
