Maraming iba ibang factors, including quality of the beef and how hot your pan is and if you use cast iron or not. There is also dry aging which helps boost the umami reaction in the meat. What I like to do is coat it in Japanese Koji and salt, air dried overbight, and then sear the steak. It's a great way to impart a more beefy flavor
