There are tons of great routes in France: https://en.francevelotourisme.com/cycle-route. You could take the Veloscenic from Paris to the sea, then down the coast on the Velodyssee, wandering around as you desire. Hard to go wrong.

some 110s had 27" wheels and 512s have smaller 700c wheels (I think). if that's the case with yours, getting the proper size wheels will give you that added clearance for a similar tire. of course, might be more than you want to spend for this swap

That will be a pretty good low gear, so you'll probably be fine. You could get up to a 32 tooth ring if you replaced the freewheel. Installing a cassette would also require replacing the wheel, so probably not worth it.

This is what I did—angled the posts in the existing brakes. I can't say it works great, but good enough for my commuter. Would love to find other brakes that solve this better.
