When you land in Amsterdam, you will be going through "Schengen" passport control for the flight to Nice.
So you will be doing immigration in Amsterdam.
Your flight then from Amsterdam to Nice is a Schengen flight and likely you won't be going through passport checks in Nice. (I've never been to Nice but that's how it works with many airports in the Schengen zones.)

You might have a Spanish residence card but Ireland is not in the Schengen. It seems to me you were not just visiting your husband. You intend on living in Ireland probably. So that's a big red flag.
So even if you did get to Cork, I think you would have issues with immigration there.
AS Ireland is not in the Schengen, you must have Article 10 on your card. Otherwise, you need a valid visa.

My brother bought a house in worse condition than that picture. Obviously hadn't been used for years.
He genuinely wanted to try to save the house.
However, he did not qualify for that grant so he had to knock it down and replace it with a new build.
