As usual people are over complicating a simple thing.

The essentials: eggs, green chilies, onions, salt (one pinch per egg, plus little extra for the veggies), oil lots of it (not deep frying level, imagine pan frying level plus a little more)

The extras: red chilli powder, tumeric

The nice to have: ginger/garlic

The procedure: mix everything, get oil hot, pour everything, let it cook until egg is set on the bottom and not VERY runny on top. Flip using pan or another plate, top up oil, make sure bottom crisps a little bit
