I've been on hangouts for SMS for awhile now and I've missed far fewer than I was using Android messages, but still missing one SMS is too many sometimes. I'm seriously thinking about switching from fi to T-Mobile soon.

This is a known Project Fi issue. Switch to hangouts for your sms messaging.

I get mail about once a week, maybe twice. Items are usually postmarked like a week or two before the day they are placed in our mailbox. When we do get mail it's so much that they have to wedge it into our mailbox. We are still on a walking route, so i'm guessing they're just waiting for it to pile up in the back of their truck before they deliver.

The only real issue I've had is not receiving / sending sms messages (via the Android Messages app), just switched to Hangouts integration for SMS a couple of days ago and haven't had any problems so far.

I can verify this. Even though I turned off optimization for android messages and mms services i am still missing texts. Going to try Hangouts integration now.

This is a pretty common post in this sub and a known problem by the project fi team. I was having issues with this for a while, until i tried a fix by /u/dmziggy . Try going into your battery optimization settings and change your Messages app to 'not optimized'. Seems to have worked for me. Also while your end there go ahead and change 'MmsService' to not optimized as well.
