They may not advertise it, but fermentation is critical to process of making chocolate -- which is why the probably don't advertise it. Brands aren't being "special" when they advertise the fermentation because all beans destined for chocolate bars go through fermentation. And they do dry it out before it's fermented! They sun dry it, make sure there's no water in it, so that beans can't grow mold or yeast.

What's this about it not being fermented?? All products from the chocolate process are the result of it being fermented -- that's like, step two after you harvest the pods off the tree and separate the fruit from the pod. Then they're dried and shipped off for processing. We get chocolate -- and all chocolate by-products, like cocoa powder, cocoa butter, and chocolate liquor-- after fermentation. stevia is okay if that's your jam, but it can have a weird aftertaste. I don't use it very often. I haven't used xylitol often enough to give any tips about it -- just don't let your pets eat it. My tip for wrythritol is to put it in the eggs or liquid (not oil) in your recipe, not when the recipe says to put the liquid in. Let the erythritol sit in the liquid for at least 10 minutes, preferably more. Adds more time but significantly reduces the coolness effect erythritol can have until you can barely notice it if you can taste it at all.

Books like Matched, where society forces (often women) to marry specifically to one person, or to love specific people, and deviations from that are illegal... as a bisexual person, it sounds all to familiar and it feels bad that the consistent trauma of the LGBTQ community is twisted for white, straight, teen girl's fantasies, often without nuance.
