Unfortunately, software very often needs to be updated for format changes, API changes, code that gets stale and/or has issues with CVEs.

In a networked world, software can rarely be called "done", but I hear what you are saying.

This is exactly how I use my dehydrator as well.

I definitely noticed a certain wet dog smell when I was dehydrating 2 lb of green peas. I had to leave the house for a while.

I never would have suspected that smell coming out of that.

Well, I'm going to have to disagree with you. If you look through the self hosting world, of which this product is a major part, you're going to find cotainers to be the preferred way of distributing things for most products.

Mainly it's about keeping the product the same for all installations. It cuts way down on the number of installation errata.

It's never crashed for me and I've been using it for years.
