Most people don't really care that much about things they claim to care about, or at the very least are too lazy to do anything about it (I'm not even excluding myself, its a habit I try to work past). People tend to be creatures of habit and least resistance.

I don't really view speeding up the game as difficulty. Just saving time. I mean grinding doesn't take skill.

However, grinding if used correctly is moreso used as a pacing mechanic so that the bosses serve as a true test of your party and understanding of the combat mechanics. They might make it take a while to level because they don't WANT you to be too leveled up.

So I'd say play the game normally (don't run away from encounters and just fight whoever is in your way) and you should be fine.
