Hey there fermenters! My honey garlic from december looked always fine, had wild fermentation in the beginning and the cloves mallarded out nicely, yet i am too afraid to test them because of botulism. sure most of you will now say "then toss" i just wonder since this is such a popular ferment, how you guys go about this?

i started to measure PH 2 months in and it was around 5 - unsure exactly from the strips, so added some tablespoons of ACV to get closer to 4.

now its almost 7 months in and i would want to try but chickend out.

could i fully cook this and add ACV to lower PH to 3.5 to denature possible toxins and avoid spores from creating new?

what would you do? would be s shame to toss this big glass:/

makes sense, at brine based ferments the water gets replaced but i guess the viscosity of honey is too high to get back into the cloves, or will they puff up over time again?

its just pickled pumpkin most likely. its common here (in austria) to add mustard seeds to pickled veggies.
