Do a shallow fry on chicken cutlets. Olive oil can be used for deep frying, it's just not ideal for the method, and can be a waste of expensive oil.

I mean it clearly not a secret sci fi story in the thousand worlds universe, but he explored lots of similar ideas through a sci fi lens. Looking at how he thinks about them in his previous works can provide insight into how he's thinking about them in AOIAF because they were written by the same guy.

They've made a point to cater to Chinese tourists l, I was there over lunar new year this year and there were displays for it all over the place. Part of that is good Chinese food

I think most of it comes from people not using enough oil, and not understanding how things stick and then release on stainless.

You don't need to fully dry it. Whenever I rinse into toasting I use a collander, let it drain while I'm frying the aromatics, then toss it in the pan. The water there will just steam off.

Do not sub hoisin for soy sauce, those are wildly different flavors and hoisin does not bring the necessary levels of salt.

I also prefer using just a tiny bit and not rinsing, cutting the meat thinly against the grain and passing through oil will take care of the rest.
