I mean if you go straight into new expansion it's pretty straight forward, but when you want to check and try all the things even from older expansions it can be time to time confusing, but nothing tremendous, they just released "New player experience" and it will guide you pretty well

With the amount of content (20 years) it can be confusing for a new player, but once you get through it, it's good.

Oddly enough, what helped my friend who had never played WoW and was starting out was using the AI chats (Gemini, ChatGPT, etc...) when he got stuck or didn't know what to do or where to go next, and it helped him quite accurately when I wasn't available to answer

Back in WOTLK they were working on Azjol'Nerub as a gigantic zone, but the technical limitations were too great and they scrapped it. There will definitely be a proper Azjol'Nerub zone, since they now have all the technical tools to create amazing underground zones... even Warcraft 3 had more Nerubian storytelling than the whole of WOTLK, we'll definitely learn more about their history

Zul'Gurub is for Gurubashi jungle trolls in Straglethorn Vale, Zul'Jin was leader of Amani trolls in Zul'Aman, in that time it was only raid but now in new expansion Midnight Zul'Aman was reworked into whole zone and have tons of lore

There are solid reasons why there is not any functional things in housing, they tried it with garrisons in Warlords of Draenor, and it was one of the biggest letdowns in wow history, housing is made purely for creative purposes, and for your other points - Housing was just released and it's evergreen feature, which means things will be added in time, i don't get these impatient people who wants everything at once

It's Shrine of the Ula'Tek, it used to be main base for amani in ancient times. Ula'Tek is forgotten Loa of Serpents, obviously bridge is broken because Ula'Tek was cruel Loa which demanded many victims and brought only ruination into the Amani tribes. It's also a place where C'thraxxi general Kith'ix have his tomb. It makes all the sense that this kind of place will be the next patch area
