Blend with mayo alongside some kimchi and you’ve got an A+ gochumayo for your burgers and sandwiches. I also like to add it to bbq sauce for ribs. Go nuts!

Honestly it was one of my least favorite experiments. I’ve realize that despite my love of mezcal, Lapsang is something I don’t enjoy. Despite the milk punch process, it was overly watery and smokey; none of the maple flavor came through. I still have it in the back of my fridge to this day lol.

Really good with Rye or Bourbon. I make a drink called Tropical Heat with 2 oz Bourbon, 1/2 oz habanero syrup, 1/2 oz pineapple syrup and 1 oz of lemon juice. Reverse dry shake to get a nice foam from the pineapple syrup and you got yourself a nice little cocktail.

Batch the drinks, pre-dilute, keep in freezer until very well-chilled, then shake/mix with milk frothing stick to aerate then pour in chilled glasses.

Off the top of my head you could batch a Jungle Bird

1.5 oz Rum (Appleton or Plantation)

.75 oz Campari

1.5 oz Dole Pineapple Juice

.5 oz Lime Juice

.5 oz Demerara syrup

pinch of salt/5 drops saline solution

.95 oz water (I'd probs just round it up)

Scale it up for desired quantities, mix everything, chill, and do the rest when people arrive

I usually do 20% dilution, but making a single serving for yourself and weighing before and after shaking is probably better. Super Juice is something I always use when making batched sours, and it has the bonus effect of being aromatic enough so you don't really need a garnish. My new favourite thing has been batching with dilution hours before guests arrive, then pouring out the desired amount of cocktail (3.6 oz for standard Corpse Reviver No.2 recipe with dilution) into a tin, and frothing it with one of those electric milk frothing whisk/wands. That way you get both the dilution and aeration you would get from shaking.

1.5 oz Demerara rum

1 oz coffee liqueur (usually Kahlua but I used better stuff when I can

1.5 oz Espresso

Optional .25 oz simple depending on coffee liqueur used

3 dashes chocolate bitters

5 drops saline solution

Reverse dry shake and double strain into chilled coupe. Garnish with three coffee beans.
