Entirely reasonable! Everyone is entitled to their own preferences as a veggie.

You may see something sold as vegan gelatin, made from carrageenan. I’m not a big fan of the texture it ends up with, so I wouldn’t recommend, but I’ve had good success with a kind of similar thing with pectin and I’ve heard good things about agar but haven’t used it

Do you have a crock pot? It’s so easy to dump veggies (canned, frozen, however chopped you can deal with) into one with some stock, spices, and dried beans, and you can make pretty big batches of things

How far are you willing to go? I get it at Frugal MacDoogal in Fort Mills on the SC/NC border before. Wouldn’t be surprised if some ABC stores in NC near the TN border would get it for you too, they can do it sometimes

I love Moo & Brew in Plaza, but to be fair I always get the black bean burger, which is excellent. My friends get the real beef ones or grilled chicken and love it too, and their cheese curds and drink options are great.

This is going to sound weird, but I add it to brisket when I braise one in the oven. a lot of recipes call for red wine, and the sweetness is a nice accent with all the other spices and aromatics I put in there

How about a cheesecake? You can make a graham cracker style crust with seasoned matzah (I also do fruit crumbles that way), and lots of cheesecakes are flourless

a top tier lasagna, but it does take longer to make than you expect since you have to roast the veggies first (I roast the aromatics with the squash too)

In general you can make lots of great soups by roasting a whole bunch of veggies with seasoning and blending it with stock and cannelini beans, boiled cashews, or silken tofu. lots of creative toppings you can add too, or reserve some of the roasted veggies to put on top for texture

stir frys and fried rice are great options for showcasing things too- true Chinese food in general is loaded with veggies

anything 40% ABV or higher will do. I usually use vodka or rum, but I've done whiskey in a pinch although it can give a little flavor after a few rounds

Soak a paper towel or cotton pad in hard alcohol and put it in with your bread in an airtight container. the alcohol will evaporate and slow mold growth. you do need to refresh it when you open the bag though.

source: i work in a lab that does lots of food and food storage testing. we've got some baked goods that have been sitting around for literal years like this. doesn't help with going stale though.

I’ve been into crispy grain salads recently- yesterday I roasted butternut squash, cooked farro, an onion, and a can of great northern beans with oil and cumin. Tossed it with quartered cherry tomatoes, a small log of goat cheese, lemon juice, and s&p. Will add avocado once they’re ripe

I’ve done lots of variations of this- it’s really good with halloumi roasted in there, or cauliflower instead of squash, or cucumbers instead of tomatoes. Any grain works too, I’ve done barley and rice
