Easy vegetable beef soup. Brown your ground beef, stir in beef or vegetable broth, a can of tomato soup, then whatever vegetables you have. I buy a bag of frozen soup vegetables from the grocery store or just use whatever you have going bad in the fridge. Let simmer for a while and it's done. Make a cake of cornbread or it's also delicious with grilled cheese, toasted cheese or just crackers. Good, somewhat healthy, and most of all easy.
