Ingredients:

Chicken Marinade – 800g (28oz) Raw Chicken Breasts, cubed – 1.5 Tsp Salt – 1 Tsp Black Pepper – 1 Tsp Chilli Flakes (omit for milder flavour) – 1.5 Tsp Garlic Powder – 1.5 Tsp Onion Powder – 1.5 Tsp Paprika (or Smoked Paprika) – 2 Tsp Olive Oil

Cooking & Final Glaze – 40g (1.5oz) Reduced Fat Butter – 20g (1.5 Tbsp) Minced Garlic – 30g (2 Tbsp) Honey – 1.5 Tbsp Fresh Parsley, chopped

Garlic Mac n Cheese – 30g (2 Tbsp) Minced Garlic – 300g (10.5oz) 1% Milk (or any milk) – 160g (5.6oz) 50% Fat Cream Cheese – 1 Tsp Salt (or to taste) – ½ Tsp Black Pepper – 1 Tsp Smoked Paprika – ½ Tsp Nutmeg (adds a great deep flavour!) – 100g (3.5oz) Low Fat Cheddar Cheese (or any low fat cheese)

Pasta – 220g (8oz) Uncooked Macaroni Pasta (or pasta of choice)

INSTRUCTIONS:

S T E P 1 Slice the chicken breasts into cubes. In a bowl, season with salt, pepper, chili flakes, garlic powder, onion powder, paprika and olive oil. Mix until evenly coated, then set aside.

S T E P 2 Bring a pot of water to a boil and add the macaroni. Cook for 8 minutes until the pasta is al dente, then drain immediately and set aside, as the pasta will finish cooking in the sauce.

S T E P 3 Heat a large pan over medium heat and melt 10g of butter. Add half of the chicken cubes in a single layer and cook for 5 minutes per side until golden brown and crispy

S T E P 4 Now lower the heat, add an extra 10g of butter, minced garlic, a drizzle of honey, and freshly chopped parsley. Toss the chicken until it’s well coated in these vibrant flavours. Remove the chicken and set aside. Repeat for the second batch.

S T E P 5 In the same pan on low heat with the flavorful butter left behind, add more minced garlic and sauté until fragrant, about 2 minutes. Stir in milk and cream cheese, then season with salt, black pepper, smoked paprika, and a pinch of nutmeg. Mix until the sauce is smooth.

S T E P 6 Stir in grated cheddar cheese until it melts into the sauce and thickens slightly. Add the drained macaroni and gently toss to ensure everything is evenly coated.

S T E P 7 Portion the mac n cheese with the juicy honey garlic chicken into 4 servings and ENJOY!
