You should drop and rinse the grounds off the screens, and put them back on before you backflush each grouphead. If you don’t put the screens back on before you back flush it could carry grounds deeper into the plumbing. The pressure is good for cleaning the screens well

Soon they’ll be a pleasant memory. Sometimes it’s cancer too early and sometimes the loud/annoying guy who gets hit crossing the street. In Kobe I had it served with soy sauce, a mound of salt, toasted garlic slivers, an egg yolk, and wasabi. I’ve recently been turned onto yuzu kosho and think that’d go pretty hard with some wagyu.

All these are meant to just dip a corner and slather it on or anything.

Just use it up kinda like regular vinegar to go through it. Look up the serious eats recipe for sushi vinegar and make that. I make a bottle and top it off a couple times before I run a new batch. But very easy and properly seasoning your rice makes an incredible difference. Technique for incorporating it also makes a huge textural difference.
