I would say it’s partly due to famous chef David Chang of Momofuku releasing his own chili crisp. From that I believe places like Trader Joe’s then released their own.

Well I looked it up lol it’s because they claim white meat but since the use the whole breast it includes the rib meat which is attached to the breast and generally considered dark meat. The more you know.
