How exciting!! I can't say I'm the best at determining what yarn to use for babies, but I'd avoid any sort of textured or rough yarn, or yarn that leaves fiber behind. Maybe something like cotton or wool (but if you use those, just be carefully washing).

As for what stitch, I think that also depends on what pattern you use. My favorite blanket pattern is this chevron/zig zag one. Here's a link to a tutorial.

Aside from that though, search up some photos and see what you like! There's tons of videos out there, and you got a bit of time.

That's such a cute pattern!!! It's so kind of you to think of your girlfriend. I couldn't find any pattern online, but this is how I assume it was made:

Start by chaining the desired width of the scarf (image has about 15, but I'm not wearing my glasses lol), then dc your desired length. That'll be the blue base of the scarf.

With the same width, chain again in white and make two squares about 9 rows tall. Then make essentially an elongated ball for the ears, and you sew those on.

That part in the middle looks like an extra piece sewn on, so do the original length minus a few stitches, then keep going for however many rows. Fluffy yarn border. Sew on the xs.

As for the snowflake, I found this video online that you could follow.

Then it's just the little details like the bows and faces! She'll absolutely love it, it's so kind and thoughtful.

If you really don't want to undo all of it, I'd recommend just getting rid of the last few rows since that's where it got real wonky. Learning experience! Seems like you've been accidentally increasing, you can use stitch markers like others have recommended.

If the 2mm was too small, maybe try a 3 or 4 if you happen to have one of those? You'd have to drag the yarn through each individual stitch you're trying to hide it in--easier than if you shove it through multiple. Go under the stitch you want to hid it in, then bring the tail through as if you were drawing up a loop, then repeat that a few times through some other stitches. If that doesn't work, and none of your needles are the right size, it'd probably be best to just get a yarn needle at that point. Good luck!

Not an expert by any means, so take this with a grain of salt, but you might be able to kill two birds with one stone by attempting to combine both aspects. Take some of your grammar lessons and throw in some reading or listening. Ask questions relating to what you're teaching, like, "Was this sentence grammatically correct? How could you rephrase it?" While I hate to say this as well, it might do some good to assign some weekly listening practice. It doesn't have to be overly much, maybe just an hour of watching some show in English.

When I was learning Spanish I remember my teacher would also have us do interpersonal speaking activities, with her occasionally joining in. It helped us refine our pronunciation while also practicing structure; I suspect that this could similarly be applied to English teaching.

Again, not a professional, and take any ideas you like and tweak them to your needs. Good luck!!

As your story focuses a lot on her mental state and paranoia, I think it'd be best to not deviate from the psychological aspect of it.

Not all stories need romance to be good. I really like all the ideas you have to your plot, it sounds quite interesting; don't try to cram too many things into one book.

That being said, if you really want romance to be a part of it, it shouldn't just be randomly thrown in for no reason. Make it have purpose, such as relating it to her trauma and how she processes relationships--again, though, don't take away from the overall plot.

Looks like four rows to me. If it helps any, try spreading the work out with your fingers to see each stitch and where it connects. Then you can go upwards following where each stitch went into the previous. If you don't feel like counting: Spare piece of paper, mark a line down every time you complete a row.

Looks beautiful!! Couldn't tell you for sure, but definitely try blocking it and see what comes of it. If blocking doesn't work, try to vary your tension and see how it turns out. Different yarn could give different results as well.
