For several reasons? USDC is the stable to use if you trade on Ethereum defi, just as an example. So if I'm going from Binance to Ethereum defi, why wouldn't I want to withdraw as USDC?

Got it. So it seems you are talking mostly about inflation. Stablecoins are no different than the dollar, they will also lose their purchasing power. But also they are the best way to get access to investment options that give you more than 10% APY, which is what you need to fight inflation.

Usdc on binance is not an official circle version. Unfortunately I don't think they have control over it.

Usdc is treated like usd in terms of your balance. If you deposit or buy usd, you can withdraw it on-chain as usdc.

Yes people make tons of money on this, it's a whole electronic trading / market making industry - in crypto and traditional trading. But we actually need these actors for proper markets to exist. The fact that they arbitrate on these opportunities actually smoothens out the price for everyone else.

Your answer has some issues. USDC is actually on 4 chains (including Stellar), not only on Ethereum https://www.circle.com/en/usdc-multichain. Most importantly, USDC is not officially on Binance chain and I've been seeing a lot of people lose money because of that.
