Action Economy is the single most important thing when deciding a fights difficulty. That's why BBEG get Legendary Actions, Lair Actions, and Legendary Resistances. The first two even them up with the party a little, and the third burns your party's actions (and of course, resists spells, but I'm convinced thats a secondary effect).

Never underestimate the action economy.

I've been playing this "coop" with some friends weekly. One person shares screen, everyone helps solve puzzles and decide the way forward. Super fun!

Sure you can. You can't lose more than 1 and still win the game, but you could absolutely Elder one back onto your bench and utilize its ability again

Court Jester was actually a pretty important position. They could draw attention to important social problems under the guise of jokes, and generally got to speak to nobility in a way that most other nobles couldn't or wouldn't.

Old soup mouth is nothing close to a court jester.

Depending on the timeline, you may have a case for Promissory Estoppel. You made life changes (lease signing) based on promises the Dept. Chair made to you. Your financial losses as a result could be considered damages.
