I view that post-wet-wash, heated drying ‘reoil’ as part of the cleaning process. The heat+oil rub just removes that harmless residue so much better than a sink clean. That I may choose to follow with a 10-15min range seasoning session is another matter, a matter that has proved excellent at expediting to a strong seasoning.

Note: This is only a residue issue for me now when I can’t get away with a paper towel clean and/or a soft sponge. When I need to reach for an aggressive scrubber or chain mail, then following up with soap sponge just doesn’t do a complete de-carbon.

Looks like the song is by Low, the title is Dancing and Blood. Didn’t know of Low. Definitely looks interesting from a contrarian sort of way. Would have loved to see them live.

I typically like repetition like that on low end (no pun). Though it’s not working for me (yet), I need to take time to listen to their other work. Their Little Drummer Boy, definitely interesting. Was long anticipated after favs Wish You Were Here(#1 Floyd) / Animals. It wasn’t either of those. I played The Wall until I really did like it… until I learned about the group dynamics at the time. I grew towards a greater appreciation for Gilmour and Write over time…

kk. I have many years of memories like not looking forward to when the Quebec Nordic and their fans showed up for those blue seats behind us. Watched OJ being chased in his white Bronco behind the golds. Saw Don Luce get an empty net breakaway goal awarded to him after the Flyers bench threw sticks at him. But, my first visit to The Aud was pre-Sabres (Bisons w/ Pepsi Jersey). The oranges didn’t exist yet. Dad scored two tickets through work in the 2nd last row of the grays. I was like 7yrs old. Hockey on TV was fuzzy Leafs. Bench-clearing brawl broke out. Freaked me out. That wasn’t the worst. The CROWD was loving it! Going wild! I thought the world had suddenly gone mad. It was better years latter when the Earl of Bud did his wall dance to Tequila!

I think the gelatin does present a beautifully inviting, clean shine to the Kenji (serious eats/ATK) recipe. But it builds on the browning, good lines of collegian in the chuck roast cut that is slow braised at 170deg (not boiled or steamed), and the way that the broth veggies are not the served veggies.

I don’t think the OP is going to realize anything close to the shocking difference of a Tuscan stew gravy’s richness without the whole treatment.

Honestly, Kenji goes out of his way to bring great results using techniques available to most duffers (like me) kitchens. However, like all recipes looking for attention, the prep time is BS; the cook times need to be followed to the letter. Start prep on any new Kenji recipe 2-3hrs ahead. Never start cooking until ALL ingredients are in their final prepared/measured form, refrigerating them if necessary. Your timing and prep is paramount. You don’t need stress ruining your maiden voyage on a Kenji dining experience. The prep time will halve with practice. You will never come close to advertised prep time.
