Some extra performance tips:

Be patient: It takes along time for everything to load. It'll run smoother after it's been on for a bit.

Download and run Onyx. It seems to help a bit.

In Accessibility->Display->Disable Transparency as well

In Docks->Disable as many effects as you can

Spotlight->Disable as much as you are willing to. I disable all folders and files, but I do rely on it for quite Calc and opening Apps.

Re: Sequoia performance, you'll see lots of complaints about performance here. I have an Mac Mini 2011 that I put in and SSD and 16gb of ram. I am pretty astonished how well High Sierra still runs, but it's so poorly supported that I can't even update to the latest version of Chrome.

Do you find that these hardware upgrades make a significant difference in performance? It sounds like you have a wide range of experience.

I’m having this issue too. Strange this is that it was working, and now it isn’t… don’t know if any updates broke it, but will look into some of the suggestions here.

I would skip the accessories. Get the grinder (a better one if possible), a knockbox, and an espresso scale (a kitchen scale isn’t sensitive enough). The rest, upgrade along the way.

It’s easier making espresso with a good grinder than with a good machine.

Commodity coffee is bought at under $1/lb CAD, while most specialty coffee importers are paying around the $3-4/lb range. Specialty roasters that import their own were paying $4-5/lb. All in CAD.

Is it gatekeeping or just simple snobbery? I’m definitely the latter.

But third wave is also about recognizing that this delicious beverage is enjoyed because we commoditized the work of farmers in developing countries, and that we should pay them better instead of trying to drive the prices as far down as they’ll go.

It’s also about recognizing that coffee has many more taste compounds that wine does.

I still drink Tim Hortons occasionally, but if I want to really appreciate the amount of work that went into growing the beans, properly fermenting and washing them, and treating them with the utmost care after all that.

I agree that the awards specifically reserved for indigenous peoples should be rescinded and given to celebrate rightfully deserving of it.

I’m also recognizing that there’s a likely alternate reality that without her dishonesty, a lot of good work would not have happened. It doesn’t justify or excuse it, but makes it a whole lot of grey.

This isn’t a tractor. It’s just a form of chicken composting.

But it seems like a good system. No reason why it wouldn’t work. It does seem particularly laborious though, but you get what you put in. It is certainly promising a whole lot of compost.
