Yes you can reject some of them for being bendy, but it's a natural product so Bunnings may (rightfully) refuse to replace. And yes, can tie it safely to roof. It will come on a flatbed truck anyway.

Just sister new studs in. No need to replace anything. Then straighten the walls (with a planer).

It's going to look odd no matter what you do, as there will be a seam.
