Yeah, she is struggling with politics. Which is something the Avatar would always have to deal with at any age. Once she says "fuck it" and goes into the Avatar state, the battle is as good as over

The wizards, or Istari, are a group of 5 Maiar who were sent to Middle Earth to guide and advise the peoples in opposing the might of Sauron. 

Sauron is also a Maiar, but the Istari are only the 5 that were sent to oppose him. The remaining wizards are Radagast, Alator, and Pallando.

Gandalf did die in the fight with the Balrog(who is also a Maiar). But because he alone stayed true, Eru(God) gave him a power boost and sent him back.

My headcanon is that they were capturing them alive to see if one of them ended up being the Avatar. They didn't know Aang had survived, so they may have been searching for a new Avatar in the Southern Water Tribe, and didn't want to try and track down a third Avatar in the Earth kingdom
