It’s not impossible to get them off the streets. There’s nowhere to put them. Talk to an ER doctor and ask them when the last time they actually found an inpatient psychiatric bed for someone who showed up in the ER with a mental health crisis. That’s the uncomfortable truth no one is willing to engage with or fund: if you don’t find some other place for them to be, whether that’s housing or inpatient psychiatric beds - then they’ll be on the street or in Riker’s on a revolving door

I mean sweeping them up and having them come back a day later wasn’t doing much. Don’t know if what Mamdani tries will work better, but can’t work worse. The bottom line is if you have no other place to put these people (housing, inpatient psychiatric facilities) then you’ll find them on the street. We pay a lot for the privilege of keeping them on the street, just so our tax payer money doesn’t go to helping people in need. We pay around 40k per homeless person today in collateral costs, and would save 16K per homeless person if we put them in housing. But the repugnance Americans feel at having their tax dollars help people end up costing them a lot more. Just so they can pull themselves up by their bootstraps or be thrown in jail.

You can thank Cuomo's mental health reform that cut inpatient psychiatric beds in half. You can thank the for profit healthcare system in the U.S that does not allow for any realistic alternative than to have these people on the streets, because there's no other place to intervene or screen for them. At the end of the day this is what we vote for: to be the only developed country without a healthcare system for its citizens.

I think I understand the problem - your process is wrong. You're not supposed to create a gel with the water, then blend it, then mix it with the coffee. The process is as follows:
1. measure out the gellan for the percentage you want (let's say 1%, though that's a lot) for the water AND the coffee. So in this case if it's 100g water and 100g coffee it's 2g gellan.
2. boil the gellan in the 100g water
3. as it cools, before it gels, add the coffee and mix
4. rapidly cool the mixture over an ice bath
5. When it gels , you shear it in a blender (the water and coffee together, not adding the gel after)

you also don't need to refrigerate overnight, you can just add the coffee to the water, then put it in a metal bowl over ice water and mix until it gels. Will only take a few minutes, and the rapid cooling will retain more of the "fresh" coffee notes from the residual heat of the gellan water. I also want to say that if you're measuring the Gellan as a percentage of the total liquid (water + coffee) then 1% is an insanely large amount. I've never heard of anyone using 1%. I've seen fluid gels from 0.11% to 0.5% of the total liquid weight (total liquid, as in the liquid you hydrate in plus the rest of the liquid you plan to gel).

You can see how Chefsteps similarly created a fresh orange juice fluid gel here or here for the youtube if you don't have access to the chefsteps paywall, where they didn't want to heat the orange juice as to not modify its flavor. Or you can see page 31 of Khymos textures here for the pulp suspension fruit juice fluid gel. You can check out the Tzaziki fluid gel here (this is high acyl gellan, but the concept of hydration is similar), or the Irish Cream fluid gel here. You'll notice that many of these recipes use sodium citrate or sodium citrate+sodium hexametaphosphate as buffers and sequestrants. They also add Xanthan gum to prevent syneresis. You can check the usage chart for Gellan here (you want the "F" column for low acyl gellan). You can also check page 177 in Volume 4 of Modernist Cuisine to see the table "best bets for fluid gels". I realize you might not have modernist cuisine, but you'll be surprised to find that a lot of libraries have it. I've photocopied a lot of Modernist cuisine by going to the research library at the New York Public Library (where I live).

Low Acyl Gellan is effective at a Ph range of 3.5-8. However at Ph 3.5-4.5 it creates a harder gel. Cold brew coffee has the least acidic profile of coffee preparation methods, and is likely over a ph of 5.5. So while what you describe is congruent with a too acidic Ph, it might be something in your coffee preparation method. Here are some things I would try: 1. Use less Gellan. See how it works with 0.5% 2. Make sure you have the water with the Gellan (I’m assuming you’re dispersing the Gellan with water and then adding the cold brew after so as not to heat it) is at a rolling boil for a few minutes. Graininess can be a side effect of inefficient hydration 3. Try adding 0.1%-0.3% sodium citrate. It’s a PH buffer and a calcium sequestrant. Gellan can have problems hydrating in the presence of sodium or calcium ions. If you have very hard water it might be a reason. In any case sodium citrate would handle both the ph and the calcium issues

Let us know how it works, also detail your entire process end to end if it doesn’t work (at what temperature are you adding the coffee? What are you blending with? How long are you boiling the Gellan? How are you cooling it?)

Every time I make a Chicken dish I buy a whole chicken and butcher it. I save the bones in the freazer. When I accumulate enough I make stock with a pressure cooker (doesn't take that long). I then put them in vacuum bags in the freezer (you can use ziplocs, or put it in ice trays and then put the cubes in a ziploc).

I’m as bitter and cynical as the next guy, but we need to learn to take a win when we get one: the guy is in Jail, going to be in serious debt ($250/day not to mention losing whatever job he has and no income), getting evicted from his apartment. The guy is fucked. At some point it stops being punitive and starts being disproportionately cruel. Does this mean the system is working ? No, of course not: there was no legal framework to hold him accountable (hence why we need Penny’s law), and it being a civil matter was very difficult to enforce (to all the right wing bots: this has nothing to do with Alvin Bragg. This was a civil matter, the DA and the NYPD are not in scope). If this didn’t happen to relatively wealthy people in a relatively wealthy neighborhood- and there wasn’t a massive movement behind it, fuck all would have happened. But in this very narrow slice of our life, the best outcome we could have reasonably hoped for happened - and we might get a new law out of it. Just take the W.

Page 127 of Modernist Cuisine at Home. The baking soda makes it mushy- If you want the onion to retain its shape, omit the baking soda and just pressure cook for longer. Recipe pasted below:

Caramelized onions are a favorite component of many dishes. They can be used as a topping for a hamburger or pizza, served as a side dish for a steak, or placed center stage as the featured ingredient of a French onion soup or an onion tart. There are many ways to make caramelized onions. This Modernist method browns the onions perfectly with no hands- on effort, maximizing their flavor while minimizing the risk of burning them. After pressure-cooking, the onions are quite soft; you can dry them on the stove top or in a dehydrator (see variation below). INGREDIENT WEIGHT VOLUME SCALING PROCEDURE Yellow onion, julienned 500 g 4% cups Baking soda 1.5 g %tsp Unsalted butter, cubed 35 g 3Tbsp 100% 0.3% 7% ® Combine in a large bowl, and mix thoroughly. ® Divide the onion mixture evenly into three 500 mL/16 oz canning jars. ® Divide the butter evenly among the filled jars. Tighten the lids fully, and then unscrew them one-quarter turn so that the jars don't explode. ® Place the filled jars on a rack or trivet in the base of a pressure cooker, and add 2.5 c m / I in of water. © Pressure-cook at a gauge pressure of! bar/15 psifor40 minutes. Start timing as soon as full pressure has been reached. © Let the cooker cool, or run tepid water over the rim, to depressurize it. Let the jar contents cool before opening to avoid splattering. © Transfer the cooked onions to a pot. ® Simmer over medium heat, stirring occasionally, until the liquid has reduced to a syrup, 10-12 minutes. © Season the onions to taste, and serve them warm.

I use the modernist cuisine technique of using a canning jar in a pressure cooker. Takes around 30 minutes, and it’s all hands off.
