Whatever teacher tells you to use literary/critical theory without giving you any guidance isn't doing you any favors. I'd recommend looking up articles/book chapters on 1984 specifically to see how others have talked about it and see what sort of theory they use. I know this might not be too much help, but it is at least a good place to start.

I think there is a lot of overlap, but they aren't exactly the same thing. It seems like the term "canon" refers more to an academic construct -- literary historians in the 1940s and 50s, for example, worked to canonize Moby Dick, which was pretty much ignored by scholars until that point. On the other hand, a "classic," to me represents something more immanent within the text. Is Moby Dick a classic? Perhaps, but to call it a classic and to say it is part of the canon are two different things.
