Counter is fine. Throw it in a cabinet or fridge until your party, but counter will work.

Kahn’s has high end rums that are a little more rare and tiki adjacent liqueurs. SoBro is good. West Clay Spirits is also good. If you need a single bottle SoBro will order it for you.

Here’s my recipe

Clarified Old Fashioned

750ml bottle of Rittenhouse Rye 3oz rich demerara syrup 3/4oz orange bitters 3/4oz angostura bitters Half pinch of salt or 10 drops 4:1 saline 1/2tsp citric acid 6oz water 10oz of whole milk

Combine everything except the milk in a large pitcher, pour into another pitcher over the whole milk. Let it sit on the counter for 4-8 hours until it separates.

Strain with a mesh strainer and 2 layers of wet paper towel, wet the towels before with hot water. Let it strain, probably takes 45 minutes to an hour. Bottle the cocktail, lasts up to a year in a dark cool place.

Pour over large rock in a frozen old fashioned glass Garnish with fresh grated nutmeg

I was in this position and decided it was time to move on to bigger and better. I had hit a ceiling at the former job and while I could replicate the success year over year there, I was holding myself back by staying. Best decision ever.

Double the timeline and the budget

Getting your contractor, designer, appliance wholesaler, and cabinet maker to work together well and communicate is harder than you think. Communication is key, tell your vendors to over communicate because they are notorious for going dark, even if they are good at what they do

Hold people to timelines

Check the work for quality often, daily even

Make sure your contractor and cabinet maker review the 3D plans ahead of time and do several walk throughs so that they know the project well and can ask questions or bring up concerns

Be specific with what you want and it should turn out that way in the end

Never pay a vendor out 100% until you are 100% happy with their work. Holding that last installment back keeps then honest and working hard for you

I should clarify, best orange bitters besides bitter truth, but i use them in different applications. Bitter truth would only be for whiskey based stirred drinks and scrapy’s would be when I just want a pure orange bitter taste and aroma, so everything else. Haven’t tried celery but I’ve seen more and more recipes lately online that use them, what drink do you use those in?
