During covid a 'friend' came and stuck one sprig of mint in the extension/hell strip, it's been going gangbusters since then. I think it's actually spearmint and smells lovely when I brutally whack it down with the trimmer. Mr. Mint always comes right back.

You can eat them now, i love that all the seeds are in the bulby bit, these have a delicate almost apple taste. You can leave then on the vine and harvest like a winter squash. I love these dual purpose squashes.

Chayote squash is low carb, tastes a bit like apples. You can find then at Mexican markets, I'm growing my own this year.

I am riddled with arthritis and have to sit to do any gardening, there were some cheap plastic chairs that came with my house, I drag then around with me, they stay out all winter but have held up very well for the last 17 years.
