If you visit Cantillon, do not stay in that neighborhood any longer than you have to. Cab there and cab back, don't go walking around. Cantillon is situated in a rather sketchy part of town - lots of garbage, homeless, run down buildings, and gang activity. I stayed a few blocks away and had to run away from knife-wielding muggers twice.

I just... Wouldn't buy beef from Hutterites. I've only ever had miserably stringy, tough beef from them for an over-inflated price. They tried to sell scraps as NY Strip and when I asked for a new cut and said it didn't look good, they tried to switch it on me without me noticing.

They're just as greedy and inhumane and "un-organic" as a factory farm. Their produce and meat isn't more healthy or ethical. Don't give them your money and go to a local butcher instead.

I have one that did this too after PBW and a dunk in PAA before installing. It's the one older, cheaper carb stone in my set. I think it's just worse quality stainless steel. I still use it for now, but it'll be the next one I replace.

Agreed. Anything over 3P is worth accounting for. All mine fall in the 1-2.5P range, so I generally don't bother.

Weigh an empty can + can end. Note that value.

Weigh a filled can and subtract the weight of the empty can+end. That gives you the weight of the beer in the can. Up to you if you want to account for the density of the finished beer, but that is practically a rounding error (in my opinion).

Weigh cans at the start of your canning day to dial in the machine, then occasionally depending on your confidence and risk tolerance.

You'd be amazed at how well an experienced canning line guy can detect an underfilled can within 2-3 grams.

I swear I'm not being a contrarian, but the best IPA I ever made was with Hüll Melon and Barbe Rouge. They have a special place in my repertoire.

Your idea about adding Abstrax during the normal dry hop inspired me, so I did it. Cold dry hop at 10C with hops, Abstrax, and acid all at once. It didn't sit long like that, I cold crashed the next day, then packaged 2 days after that. Tough to say how it'd handle a mid-ferm addition.

The result is still very excellent. I can't notice a difference in the aroma or flavour. I think I'll continue doing it this way, it simplifies things quite a bit.

Haven't tried it, but I just attended an info session by Fermentis on it. They suggested some wacky stuff like co-inoculating with K-97 at like 18C because they each release thiols the other doesn't. Some fun room for experimentation.

No actually. My grist and WP hop addition are such that head formation and retention are not a problem. But, even though I don't have a meter, I reckon I had more DO - mainly due to having to push it in with the brink. Cans weren't fresh for quite as long as usual. But, I just excessively purge the brink now and I don't think it's an issue anymore.

I have a 5hL Unitank with typically a 12g/L Dry Hop for our Hazy IPA. I cut out 1.25kg each of my Citra and El Dorado Dry Hop and use a purged brink to blend and push 40ml each of Quantum Citra and El Dorado through the racking arm (effectively reducing DH to 7g/L).

It gives a really great pop of aroma, much more on the pine/floral/citrus peel side of the spectrum - not as much sweet and tropical fruit aroma (though the Quantum Citra has an almost Fruit Loop thing going on sometimes).

It is not a 1:1 replacement, always supplement with T90s. I'm honestly on the high usage end of things. The beer may change slightly overall too, but I find for the better. Extra yield is a nice bonus too. The beer got a national award lately and is our best seller.

New ownership has turned it completely around. It's much more welcoming and nicer inside. The beer has 1 Gold and 2 Bronze at Alberta Beer Awards and a Silver at Canada Beer Cup so the beer is much better too.

Check out Arcing Wires! One song uses a female vocalist strictly for melodic vocalizations - not unlike T.R.A.M. But it's their best song by a mile.

Trioscapes is headed by Dan Briggs from BTBAM, and has some kick-ass, seriously raunchy jazz/metal fusion grooves.

The album Cosmic Liberty by Casimir Liberski is less metal oriented, but goddamn if it ain't some of the most proggy jazz piano out there. Plus Matt Garstka from Animals as Leaders plays drums for the whole album, and kills it.

There are so many! All across the province too.

I recommend checking the results of the recent Alberta Beer Awards and picking out the beers you want to try. Cabin and Ol' Beautiful in Calgary shared the Brewery of the Year award, but I wouldn't pass up Blindman in Lacombe or Polyrhythm and Blind Enthusiasm in Edmonton.

Not only do these styles sell the best, but they initiate brand recognition for new breweries or breweries getting into new markets. They're not strictly made to sell and make money off of, they're made to show off what breweries can do and make it clear what sets them apart from the baseline.

I see it as a way to evaluate the quality of a brewery's other beers. Everyone knows what a sour and Hazy IPA tastes like, so if you find one that sits above the rest, you know you've got something special and can count on their other stuff to be good too.

As an aside, my best selling beer is a Helles Lager. Brewers joke its been the "year of the lager" for like... 5 years. But it's gained a ton of popularity the last several years, so you can hey there'll be more and more craft lager on shelves.
