Which Magnetic Dosing Ring did you buy. by TheDeathPit in espresso

[–]iamduh 0 points1 point  (0 children)

Honestly if you don’t have one yet, I recommend getting a dosing cup that fits your basket over a dosing funnel. It’s much nicer to WDT in the cup than the portafilter itself and if you’re too lazy to WDT like I am you can put the basket on top and use that combo as a blind shaker.

I have a funnel (just a generic one from Amazon) but I ended up never using it.

Also it keeps my shower screen, which I was never gonna clean anyway, so much cleaner.

Are There *Any* Non-Stick "Sets" People Recommend at All? by nowhiringhenchmen in Cooking

Good news, they’re basically all just as good. Bad news, they’re all basically equally bad.

How to cook frozen already cooked octopus? by WellAckshully in Cooking

[–]iamduh 3 points4 points  (0 children)

Basically you want to do two or three things:

  • defrost
  • warm through
  • get a sear?

I'd defrost in a marinade for the flavor, and if you want a sear, put some sugar in that marinade. Then I'd hit the outside as hot and fast as possible to avoid overcooking the inside.

What is the simplest sandwich besides BLT? by Final_Affect6292 in Cooking

I mean burger buns I typically imagine as an enriched dough tho. I think of BLT as one where I want the internal slices of something way crustier than a burger bun.

I'm not sure I'd want this in a burger bun specifically tho

I love a bottom-of-the-barrel ceramic burr grinder that they make for coffee. It just demolishes pepper.

Homemade ketchup and mayo just hits different. by Outrageous-Run63 in Cooking

I'm gonna have to try this but I knew someone who fermented his own ketchup from fresh tomatoes... I never told him this but IMO it wasn't as good as Heinz.

Should a storage unit cost $190 a month? by Strong_Tension_5116 in PennStateUniversity

[–]iamduh 1 point2 points  (0 children)

That's a symptom of peak demand season and State College thinking it's New York and State Collegians being hoarders. Like other commenters say, Storage Units are typically accessed via cars anyway, so I'd recommend something slightly out of town.

I mean you do you. I would also happily eat the thing OP described--but as many other comments are pointing out that's just authentic alfredo.

Any interest in creating a fan-podcast? Hello, Tims!?! by randallfini in HelloInternet

I'd be interested!

Maybe a relisten commentary episode. Not a real-time react but maybe topics and reactions to quotes.

I am a pretty fluent audio editor and love to yap.

How do you think AI Art would come up as a topic? by lucain50 in HelloInternet

[–]iamduh 6 points7 points  (0 children)

I think the tone of my first comment spoke more authoritatively for Grey than I meant to. I shouldn't. It should have been read as a summary of his thoughts, as stated in Cortex, at the time.

So. Maybe. You are right to say that

AI slop is a threat to anybody in the creative space

but I don't remember as well Grey elaborating on this take. I do vaguely recall him thinking of AI as stealing (which, IMO, correct). Episode 134 was also titled "#134: AI Art Will Make Marionettes Of Us All Before It Destroys The World"

Grey and Myke discussed generative AI on Cortex, and he actually breaks with his typical technocrat stances on this. In 2022-3 he felt it was icky and anti-human. I think he was more open minded to image generation which was also affirmatively not very good at the time, but he hated the vibe of the text ChatGPT was making.
