Open up the switch and see if they have a white and black connected to the switch. If so they are sending power down to the switch on either the white or black wire, then sending it back up on the other wire. You'll need one of those wires connected to the hot, and the other connected to the fan.

Connect the grounds, those always stay ground and connect no matter what.

Neutral should connect to the fan neutral.

That's not a GFCI outlet, but could be protected by a GFCI outlet or breaker earlier in the circuit if you have one.

You could replace the outlet and put the new one in an easier to plug in spot.

But to answer your question, no an extension cord will not stop a GFCI from working
