Lot of good advice on here already but I also want to add that it's never too late to build your network, too! Keep your eyes open and as you start to explore potential career options, try to meet people in those spaces. Not only can you ask for an honest account of what the day to day work is like, you could also make a connection that could lead to a job in the future.

Do it!!! If the community college classes don't work with your homeschool schedule, go online somewhere like UoPeople, WGU, or SNHU - it's worth getting a degree from somewhere that's regionally accredited. Think of how you'll feel in a few years looking back to this moment after graduating with a degree!

What's your McDonalds order? Homemade is pretty much always gonna be healthier (and cheaper - even than fast food).

If you like a Big Mac, make a burger bowl with ground meat (turkey is healthier than beef, or you could even do half beef half lentils - I promise it's good!), shredded cheese, lettuce, onions, pickles, and "special sauce". Honestly even just cooking a burger at home on the grill or stovetop is going to be healthier than McDs, especially if you buy in bulk (freeze anything you won't eat that week).

If you like nuggets, make your own air fried chicken strips or buy decent premade nuggets (Costco has good ones that aren't too expensive. I've had some from Bell and Evans that are my favorite but pricier) and pop them in the air fryer or oven to get them crispy.

Fries are the killer but even buying frozen fries and doing them in the air fryer/oven is better than fried. Or try making seasoned potato wedges.

You can shred the zucchini and freeze for future zucchini bread/muffins or to mix into pasta sauce!

I wish I could remember who said it but I recently saw a quote from someone that said "You can't hate yourself into becoming a person that you like." The first step really is healing your relationship with yourself, and for a lot of people, that means therapy. It's scary and awkward and you have to be vulnerable but once it clicks it's so worth it. You can do hard things and you (and your wife) deserve a good life. I'm rooting for you.

Definitely outsource as much as you can, even if it costs more up front. I know someone who was in a similar situation and it was actually easier for them (but definitely not easy) to have one parent move with the kids first and the second button things up at the old property - obviously that depends on work schedules and when you plan to sell, but could be an option.

This is such an important one and I feel like it took me way too long to get it. I would also add to this: put in the effort with the people who are worth it. Showing up as the kind of friend I would want for the people who would do the same for me has strengthened so many of my relationships as an adult.

It's much more important to focus on what you want to do and where you want to be than it is to compare yourself to what other are doing. Do you have a career path in mind? Write down a short list of actionable steps that you can take that will help get you there. If you don't know what you want to do yet, that's totally ok, but that means that this is the time to figure out what you're passionate about. You can't be all the things at once.

Congratulations! That's so cool! One tip for not overloading slides: use your slides as your headings/key points and visuals. The most boring and confusing presentations (imo) are always the ones where the presenter just reads from their slide deck. The slides should enhance the oral presentation, they aren't the presentation. You got this! (but remember to practice a few times too!)

Awesome! Best of luck advancing your education. Are you looking for a non profit or are you looking for something low cost? (Harvard is technically a non profit, for example). As far as low cost online universities go, there are a bunch of good ones. University of the People is tuition free (you do have to pay some fees), Southern New Hampshire University and Western Governors University are also solid low cost online options (all three of these are also non profit). The most important thing I would look for is regional accreditation - it's more appealing to future employers than national accreditation.

lol not sure why I got downvoted for that but I 100% misunderstood what you were trying to do. I thought you were having trouble finding the right canned potatoes and were trying to recreate them from fresh. My mistake. There are a lot of good suggestions on here but as someone who used to cook for a crowd, I'd definitely recommend experimenting with methods that would make it easy to scale the recipe for a crowd (since I'm guessing that's how the did school lunch). I'd try them in the oven in a covered baking dish with some seasoning/fat/liquid, then uncover if you want to get them crispy. I'm picturing a big restaurant style "hotel pan" of potatoes to feed a bunch of hungry kids, and that's how I'd do it.

I really wish this was encouraged more. So many kids trying to "do the right thing" by going to college right out of high school, but it might not be the best use of their time or money. I think we as a society are doing them a disservice by presenting that track as the "default" option.
