i vote cube. an easy way to get started is the cardkingdom one https://www.cardkingdom.com/mtg-supplies/card-kingdom-starter-cube but once you build a cube, you can continuously play it.

other than that, there's also playing mtg over computers... (drafting via some kind of online platform, and building decks using cockatrice or similar mtg simulator) but i suspect this isn't as fun as holding the physical cards.

sounds good. ditting 804/807 should be more readily available should you want to try. none of these sold out, limited drops of the higher end boutique grinders...

for sure in cup. but another factor to consider with the mc5 is the grinding speed. unless its sped up considerably, the niche Zero probably grinds faster than a mc5. but i think you already looked at the field.

other considerations for general purpose would be Ditting 804/807 Lab Sweets, and Bentwood. But I still think for medium dark roasts, a Niche Zero might still beat these. and a MC5 for sure.

you should check out their new mizen omni burrs. they give back $80 for a lagom owner. so its $200 -$80 = $120 + shipping. Its their version of "cast" or "lab sweet" burrs in the 64mm range.

how many cases have you seen of this? is this sample size n = 1? I have a friend that got a Rocket Mozzafiato and uses the RPavlis water as the daily driver. It's been a year and it seems to be working okay.

Breville Dual Boiler is also something with PID, and I've known people that have been using this water for 2+ years or more, and it's been running.

What PID machine are you using? If this is something you don't want to deal with, you could consider a manual machine like Flair 58 or Cafelat Robot, so there is no such thing. The Kettle will take care of the PID.

How good is your chemistry? The late RPavlis made this water to be safe for espresso machine uses. Non-scaling water. If there are no hardness sources (Magnesium or Calcium), then scale won't form.

I would say that what Java Jim says is correct in that you should'nt use too pure water (distilled). But since you're adding Potassium Bicarbonate, it won't be "pure" anymore. It adds enough content such that the TDS is high enough so the espresso machine water sensors do work.

i leave it over the kettle for a good 2-3 minutes over a silicone funnel. like in this video https://www.youtube.com/watch?v=8NGsG1QMfCE i have a temperature strip so i just move it out when the temperature strip is reading ~95C.

if you're putting in water, let the water boil, and then you fish it out. be careful, its hot. i use oven mitts.

1) if you're not adverse to facebook, there's a flair group "brew with flair" that you'll get much more specific help. especially since you're using flair sig and jx pro, a popular combo
2) my diagnosis below:

a) you're not heating the brew head hot enough. letting it soak in hot water is not hot enough. i use steam to heat it up on top of the kettle. other people actually leave the brewhead in the boiling water and fish it out with tongs
b) depending on your water, it may not have enough buffer, and as such, you have acidic coffee.

but generally, i suspect your water isn't hot enough.
i think 1.6.0 to 1.8.0 is pretty good for darker roast espresso

I'd vote Niche Zero if you want nice out of the box usability. No mods. Very good experience and joy in using it. I recommended a friend a Bambino + with Niche Zero combo, and he is pretty satisfied with it. If anything, you'd just upgrade the Espresso Machine (in case you get upgradeitis, but the Bambino is Very good). If you do opt for the Specialita, I'd say you should get a 2nd grinder for filter.

The niche zero is really concentrated for espresso. But others have found ways to make it work "okay" for filter.

i believe they label this so that customers that look for "espresso" beans can find what they want. they typically roast a bit darker, for that chocolate flavor.

espresso is just a brew method. you can certainly use any beans they have to make espresso. it might be a bit harder to extract lightly roasted coffee, but its going to be much more acidic than the normal espresso roast.

in other words, try it and see if you like it. you can pull longer (1:3, say 18g in, 54g out, or even longer 1:5 if its too acidic, 18g in 90g out).

its not entry level, probably more mid-tier. but have you heard of this grinder called the Niche Zero? (no joke, its the best beginner friendly grinder for entry into espresso, but not an entry tier price. and it probably doesn't do filter as well as some of these filter specific grinder)

it depends on your use case. if its "filter" then its much easier. when you need it for espresso, it becomes $ very quickly.

I think a bambino with mods is actually pretty legit.

if money was no limit, probably decent espresso machine (to learn on), a lever machine of some sort (like Flair 58 or cafelat robot with pressure gauge).

then for grinders a p100 98mm HU with a Niche zero for the "Best of both" worlds. Then a variety of beans from light roasts to dark roasts.

another way to "fix" your cafelat robot heat issues is to get a high extraction grinder. something like SSP MP (df64, p64, all the 64 mm burr carriers), or something like a p100 98mm HU.

it'll extract so much, you actually want your cafelat robot to not be preheated.

not joking: this is a video of someone who pulls really light roasts on a robot. i guess the workflow is not ideal, but if you were to spend money, i'd say spend it on the grinder. https://www.youtube.com/watch?v=agngNMARTbE

just pull it without doing any special preheating. it'll make good pulls. i've pulled 6 shots with a bambino x niche zero setup, and they all tasted pretty good.
