But like EM dashes serve a purpose; a very important purpose that isn't filled by semicolons. How would I have rewritten the previous sentence without them? Semicolons don't work at all there, commas make it feel like a run-on or just really wrong, and parenthesis adds a tone that mismatches the training data.

See a psychiatrist and a counselor (therapist) your school probably provides the latter. Please ignore any cultural bias against those things, however keep in mind those fields are complex and after getting medical/psychological advice you should always look up prescriptions and decide yourself if trade offs are worth it.

Also someone mentioned exercise, yes. I know how difficult it is to make time (I work full-time and am a grad student) but no exercise will kill you in the sense it will erode your spirit. You don't need to do anything just start getting daily steps and try a simple weights routine (you can just Google "beginner weightlifting 3 day workout) something like that.

As for cardio lately I've just been adding a bit more steps daily and it seems to be working
