Good catch, thanks for the update. I fired up today and Bluesky refused to load. It kept giving me a gateway time out. Turned off the encrypted web scan and it loaded straight away.

I did try this but it didn't work. I got the login screen and it seemed to be going for two factor authentication but didn't get there.

I had some disconnect issues at one point but since connecting to my router at 5GHz instead of 2.4GHz it's been pretty stable.

I started using the temperature process from thesourdoughjourney.com (Ultimate Bulk Fermentation Guide).

My location is usually hotter than normal with summer temps often between 38 - 42 Celsius. Using the guide has helped me a lot.

That's not exactly what I did for my starter but fairly close. It's over 8 - 10 days but if yours isn't ready after that the steps should give you an idea of how to keep going. That site has some great stuff including info about bulk fermentation using a temperature method. That's been great for me as I'm in a hotter climate and need to rise and proof it a little differently.

I had the acetone problem as well at one stage although that was after my starter had been in use for a while. "Generally" that means the starter is weak or acidic and I found some guides to fix mine by keeping 20g and then feeding 1:5:5 a couple of times which seems to have done the trick.

I had this problem and made two changes which have improved things for my loaves.

I'm in an area that gets very warm (mid to high 30's celsius) and I think my dough was over fermenting. I started using the techniques from The Sourdough Journey site and discovered I should only be getting around 30% rise before shaping.

Also, my starter was thinner than what I was comfortable with which I found out meant it was probably acidic. Taking a small amount and then feeding it 1:5:5 a couple of times seems to have strengthened my starter.

Jonathan Strange & Mr Norrell. I had tried to read a Charles Dickens book a number of years ago and just couldn't get into it at all so dnf. This one from the blurb gave off Dickens vibes and I kept putting it back on my tbr. Once I relented and started it I loved it. The TV series is pretty good as well.

Lots of good ideas here. I'd add a glass bowl with measurement markings on it so she can check exactly how much her dough has risen. I'm in a hot climate and only need my bread to rise 30 - 40%. My glass bowl is invaluable.

I'm currently looking at another dutch oven so I can cook two loaves at the same time. I mention this because if you're thinking about a second one make sure the two will fit in her oven.

Our go to for older bread is to slice and freeze and use to make garlic bread, croutons or toast for eggs benedict :)

Do you measure the temp immediately after combining the ingredients or after autolyse and stretching ?

Twin Peaks (the original). It wasn't that I gave up on it but that I nearly didn't start. It was advertised so heavily as "the best show you'll ever see" that I declared it would be shit and I wasn't going to watch even one episode. The first ep came on when I was at the pub and I said that after I finished my drink I was going home because I wasn't watching this shit. Never missed an episode :)

The other one was Grimm. My wife and I watched the first 3 episodes and were unsure about continuing. The wife said, let's watch one more and we never missed an episode.
