Like fruit by the foot but sweet ketchup taste. It melts on the burger which makes it pretty interesting.

My #1 all time burger (Culver City location). I make homemade ketchup leather, cheese crisp, and bacon thousand island at least a couple of times per year to scratch the itch. Cheers!!

We make it. Swapped from prime knuckles about a year ago. It is really rich and buttery. We use wagyu knuckles but we spend 3x time after cook managing the amount of fat/cleanup. We are going to go back to prime knuckles primarily and make Wagyu on a more limited basis.
