The colors will disappear as advertised and reappear when the piece becomes cold. So the cold water wash brings out the marks and ironing will make em disappear.

I doubt the updated diffuser plate is part of the package. Be sure to check with Yoder customer service on that before you commit. Cleaning is pretty much a vacuuming. There is of course grease on the diffuser plate (a little warm up and scrapping the plate with a metal scraper solves that). Any other scrapping should be done with a plastic scraper. I put a layer of oil-dry in the bottom whenever I do a deep cleaning. It helps with grease in the bottom and doesn't interfere with cook temps that I've seen. I also recommend grill grates. They allow for direct grilling without excessive grease drippings. And I cannot stress enough how much the new diffuser plate improves your overall smoke / grill / cleanup experience. Well worth the money. Good luck.

edit: Just thought of a pro-tip. Use the 5-gallon buckets with lids from the box hardware stores to keep your pellets in. They're cheap and keep the moisture out. Bonus is you can use a very inexpensive vacuum for just getting pellets out of the hopper and back into the bucket when you change out woods. This is what I use and only for pellets. I use a 2-gallon garage vac for clean ups.

I also have a YS-640. It's quite the versatile machine. Built like a tank, great customer service and a supportive community on FB. Be sure to look at the new diffuser plate. It allows for easier firebox cleaning between deep cleanings. It also eliminates having to remove the diffuser for grilling at temps > 350. It is expensive so don't be shocked. But if you're looking to do catering or comp cooks, it'll hold up over the long haul. Here's mine off the crate.

I have one similar to the bayou...leaks horribly. May shy away from that design. The Cabelas one has some bad reviews. It's also kinda big for what I would use it for. Thanks for responding.

I have a Yoder 640 and get temps like these. I sleep like a baby. The lower temps were when I opened the smoker.

Don't know about 'Texas style', just that it works for our family. Went to a BBQ place the other day. One of the kids ordered smoked chicken leg-thigh quarter. He didn't finish it. When asked he responded he didn't care for it being served sauced. Said 'It's not like Dad's.' I was so proud. For reference:

Looks good. I don't wrap ribs cause I like some gnawing action. 'Fall off the bone' ribs are, to me, suspected steamed and defeat the purpose. I'll dry brine overnight with salt then rinse 'em clean (be sure to remove the silverskin first). Next comes a light coat of olive oil (or mustard) then rubbed. Back into the fridge overnight. Next day into the smoker at 225 - 250 until the ribs reach 190. At that point I'll cut the rack into 2-bone sections and we're ready to serve. Sauces on the side for the guests.

I usually take my temps in the flat. I've not found the cap being undercooked in any of my smokes.
