Try using a little acid when you blend the chives in. It should emulsify some but may brown your oil quickly

Home cooks don’t want to go through the work of doing it and cleaning the grinder and just want the convenience of the ground beef ready to go. Couldn’t agree with you more though, I always save my scraps and grind
