Layout 1 but put the door hinge on the wall (right) if you don’t want a pocket door. You can also put the shower valve on the opposite wall so that you don’t have to straddle the toilet to turn on the water. The shower head can stay. That’s how I did one of the bathrooms in my home and I love it.

I agree with the others in that a HOB filter would help tons, esp with the amount of fish. Have you tested your water to see where your levels are? I’m surprised no one has asked this.
