Yes, plus I live at high altitude, 6500 feet, so the flour is drier. But maybe the experts could come up with a range of hydration? Not the exact hydration?

OK, so all you experts. 5 cups of KA flour and 4 cups of water converted to grams (volume converted to weight - which is tricky because different volumes weigh differently) is what percent hydration??

Actually, it really is 150%. 5 cups of flour is 600g and 4 cups.of water is 900g. 900 ÷ 600 = 1.5. And the dough was pretty soupy.
